Mini Vanilla Cheesecakes with Homemade Peach Jam! OK, can I just say how much I love cheesecake! Like seriously! As my sister and I entered the teenage years, we would ask my mom to make us cheesecake for our birthdays. It just seems more sophisticated than the old fashion birthday cake, but it wasn’t until I was married did I try and make it on my own. I soon found out the greatest secret about cheesecake…IT’S SOOOO EASY TO MAKE!! I try to keep a couple packages of cream cheese in the fridge for when we have company because It’s something super simple I can whip up!
2 pkg. Cream Cheese (8 0z. each)
- make sure to soften cream cheese
3/4 cup of sugar
1 tsp. Vanilla extract
12 vanilla wafers
paper cupcake liners
Heat oven to 275 degrees
Take your cookies and place at bottom of liner in cupcake pan
Mix cream cheese, eggs, sugar, and vanilla with electric mixer until fluffy
Pour mixture over cookies
Bake for about 25 minutes
After its cooled put ½ tsp. of peach jam on top and garnish with raspberries
You can buy peach jam or make your own!
½ cup water
3 Tbsp. sugar
2 tsp. cornstarch
Sprinkle of nutmeg
1-cup fresh pealed peaches
Bring sugar, water, cornstarch, and nutmeg to boil for about a minute
Add peaches and boil for another minute
You can puree in blender for smooth texture or
Stir and pour ½ tsp. on cheesecakes!
